175 gram(s) dark chocolate (70 per cent cocoa), chopped
4 organic eggs, separated
2 tablespoon(s) crème de menthe Crème fraîche, to serve
Cocoa, for dusting
Mint chocolates, to serve

Gently melt the chocolate in a heatproof bowl over a pan of barely simmering water. Remove from the heat, stir until smooth and allow to cool.
Beat the egg yolks and gradually add to the chocolate mixture with the crème de menthe, stirring, to mix well.
Whip the egg whites until softly peaked, then, using a metal spoon, gently fold into the chocolate. Divide among 4 dessert glasses and chill overnight. Serve with a dollop of crème fraîche, dusting of cocoa and mint chocolate.
