  • 175g plain flour, sifted
  • 110g butter, diced
  • 55g medium oatmeal
  • 2 medium onions, finely sliced
  • 400g Bramley apples, peeled, cored and sliced
  • 1 tablespoon chopped sage
  • 180g Wensleydale cheese
  • fresh nutmeg, grated
  • beaten egg, for glazing

Method

  1. Put the flour and butter in a food processor with a pinch of salt. Process until it resembles breadcrumbs. Transfer to a bowl.
  2. Stir in the oatmeal and add 2 tablespoons water. Bring together with a knife until it forms clumps, then with your fingers.
  3. Transfer to a floured worktop and knead until smooth. Wrap in clingfilm and chill for 20 minutes.
  4. Heat the oven to 200°C (180°C fan oven) gas mark 6 and put in a baking sheet. Blanch the onion in boiling water for 4 minutes. Drain and dry with kitchen paper.
  5. Roll out two-thirds of the pastry large enough to line an 18cm- 20cm pie dish. Layer the onion, apple, sage and crumbled cheese with nutmeg, salt and pepper.
  6. Roll out the remaining pastry into a circle large enough for a lid. Brush the edges with water. Cover the pie and seal. Trim the edges and brush with beaten egg. Bake on the preheated baking sheet for 35-40 minutes.
