Cool cucumber, apple and radish salad

• 1  lemon, segmented, then cut into small pieces (reserving the juice)
• 1 large dessert apple, sliced into slivers
• 4  spring onions, sliced
• 1  cucumber, peeled, halved lengthways, then deseeded with a teaspoon and thinly sliced at an angle
• 1 bunch(es) radishes (buy the long 'breakfast' radishes if you can find them), cut into wedges
• Half bunch(es) dill, finely chopped
• Half bunch(es) flat-leaf parsley, roughly chopped
• 1-2tsp cider or white wine vinegar (optional)

Method

1. In a bowl, add lemon pieces and juice then add apple, tossing them to prevent browning.
2. Now add spring onions, cucumber, radishes and herbs, season with sea salt and freshly ground black pepper, then mix well just before serving. If you wish, dress the salad with a light sprinkle of vinegar.
