• 1 tablespoon(s) olive oil
• 1 large potato, peeled and roughly chopped
• 2  celery sticks, chopped
• 1  garlic clove, crushed
• 1 bunch(es) spring onions, trimmed and chopped
• 1 pint(s) vegetable stock
• 2 can(s) sweetcorn, drained
• 300 ml light soya milk

Method

1. Heat oil in a large pan then add potato, celery, garlic and half of spring onions. Cook for 5 mins to soften slightly without colouring.
2. Add stock and sweetcorn, bring to the boil, then reduce heat and simmer for 5 mins, till vegetables are tender.
3. Pour half of mixture into a blender and whizz till smooth. Return to pan, pour in soya milk and warm through gently. Serve sprinkled with reserved spring onions.
