Courgette ribbon salad

• 3  courgettes
• 2 tablespoon(s) runny honey
• Juice of 1 lemon
• ½tsp English mustard
• 25 ml extra virgin olive oil
• 250 gram(s) cherry tomatoes, halved
• 70 gram(s) bag lamb's lettuce
• 50 gram(s) bag rocket
• 25 gram(s) pumpkin seeds

Method

1. Using a vegetable peeler, peel down the length of a courgette to make ribbons.
2. Repeat with the remaining courgettes. Put into a bowl. Mix together the honey, lemon juice, mustard and oil, adding seasoning to taste. Pour the dressing over the courgettes.
3. Add the tomatoes, lamb's lettuce,rocket and two-thirds of the pumpkin seeds. Toss gently. Serve garnished withthe remaining pumpkin seeds.
