  • 4  medium-sized courgettes
  • 2 tablespoon(s) olive oil, plus extra for drizzling (optional)
  • 1 tablespoon(s) lemon juice
  • 1 tablespoon(s) finely grated lemon zest
  • 2  garlic cloves, finely chopped

Method

  1. Preheat the grill to medium-high. Slice the courgettes lengthways, as thinly as possible. Brush with olive oil, then grill for 3-4 minutes on each side until they are lightly browned. Leave to cool.
  2. Place in a dish, then squeeze over the lemon juice, scatter over the zest and garlic, then season. Drizzle over a little more olive oil before serving.
