  • 500 gram(s) (1lb 2oz) couscous (we like Belazu Traditional Barley Couscous Moroccan, £2 for 500g, Sainsbury's Special Selection)
  • 900 ml (1½ pints) hot, light vegetable stock
  • mint leaves, for garnish

Method

  1. Tip the couscous into a bowl and cover with stock. Leave to stand for about 10 mins.
  2. Stir till grains are well separated. Transfer to serving bowl and garnish with mint leaves to finish.
