Ingredients

  • 600 gram(s) (1lb 5oz) baby new potatoes, halved
  • 4 tablespoon(s) olive oil
  • 12-15 black olives, stoned and chopped
  • 2 tablespoon(s) chopped fresh chives

Method

  1. Boil the potatoes in a large saucepan of lightly salted water for 12-15 minutes or until tender. Remove from the heat and drain. Return to the pan and crush the potatoes lightly with the back of a fork.
  2. Add the olive oil, black olives and chives to the pan and toss to mix well. Season and serve.
