Duck with orange, balsamic and basil

• 2  duck breasts, skinned and sliced into strips
• juice of 1 orange
• splash of good-quality balsamic vinegar
• 1 bunch(es) basil, torn
• 200g/7oz fine green beans

Method

1. Heat a large frying pan till hot. Add duck and cook for about 6-8 mins, till no longer pink and cooked through. Raise heat, then add orange juice and balsamic (be careful as it will spit) and cook for a couple of mins, stirring occasionally. Stir through basil then take off heat and let basil wilt.
2. While duck is cooking, add beans to a pan of boiling, salted water and cook for about 5 mins, or till just tender. Drain then refresh in cold water.
3. Serve duck with beans and some crusty bread on side to mop up juices.
