1 small baguette, thinly sliced
2 tablespoon(s) basil oil, plus extra to drizzle
454 gram(s) bag frozen peas, defrosted
600 ml (1 pint) vegetable stock

Preheat oven to 220°C (200°C fan) mark 7. Put bread on a baking sheet, drizzle with 2tbsp basil oil and bake for 10-15min until golden.
Put peas in a food processor, add vegetable stock and season with salt and pepper. Whiz for 2-3min.
Put soup in a pan, bring to boil and simmer for 10min. Spoon into warmed bowls, add croûtons, drizzle with oil and sprinkle with salt and freshly ground black pepper.
