  • 150g/5oz butter, softened
  • 225g/8oz golden caster sugar or with half soft brown sugar
  • 2 eggs
  • 250g/9oz self-raising flour, sieved
  • 1tsp baking powder, sieved
  • 1tsp ground cinnamon
  • 3 cooking apples, peeled and cut into bite-sized pieces
  • 75g bag dried cranberries
  • 1tbsp milk
  • 1 eating apple, sliced, for topping (optional)

Method

  1. Preheat oven to gas mark 3/170°C (150°C in a fan oven). Add butter, sugar, eggs, flour, baking powder and cinnamon to bowl of a food mixer and beat until well mixed.
  2. Stir in cooking apple and cranberries until combined, then add milk and stir well.
  3. Spoon mixture into tin, then sit eating apple slices on top in a circle, if using, and pat down slightly into mixture. Put in oven and bake for 1-1½ hrs until golden and a skewer comes out clean when poked. If it starts to brown too much, cover loosely with foil.
