Beef and greens soup

Ingredients

  • 1tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 700g/11⁄2lb good-quality stewing beef, cut into bite-sized pieces
  • handful of fresh thyme leaves
  • 2tsp paprika
  • 450ml/15fl oz hot vegetable stock
  • 3 potatoes, peeled and cut into bite-sized cubes
  • 300g bag of greens, finely sliced

Method

  1. Heat oil in a large heavy-based pan. Add onion and a pinch of sea salt and cook on a low heat for 3-4 mins until soft, then add garlic and cook for a couple more mins.
  2. Add beef and plenty of freshly ground black pepper. Then stir in thyme leaves and paprika and cook for about 10 mins until beef is browned all over. Pour in a little stock and stir to get any bits from bottom.
  3. Add remaining stock and simmer gently with lid ajar for about 30 mins. Then add potatoes and greens and cook for a further 20 mins or until potatoes are tender. Top up with more stock or hot water if needed. Taste and season with more sea salt and freshly ground black pepper, if required. Ladle into bowls and serve with lots of crusty bread.
