10 QUICK AND EASY DESSERT RECIPES
FIND A QUICK AND EASY RECIPE

  • 225g  unsalted butter, very soft, plus extra for greasing
  • 175g  soft light brown sugar
  • 3  medium eggs, beaten
  • 2  tablespoons malt extract
  • 225g  wholemeal self-raising flour, sifted
  • 1 teaspoon  baking powder
  • 2 tablespoons  milk
  • 400g  Bramley apples, peeled and cut into 1cm chunks
  • 2  dessert apples, peeled and thinly sliced
  • ½ teaspoon  ground cinnamon
  • 1 tablespoon  caster sugar
  • 1-2 tablespoons  clear honey

Method

  1. Heat the oven to 170ºC (150ºC fan oven) gas mark 3. Lightly grease and line a 20cm round cake tin with baking parchment.
  2. Beat the butter and sugar until fluffy and lighter in colour. Gradually beat in the eggs a little at a time. If about to curdle, beat in 1 tablespoon flour. Beat in the malt extract.
  3. With a large metal spoon, fold in the flour, baking powder and milk, then apple chunks. Turn into tin and level. Toss the dessert apple in the cinnamon and caster sugar. Overlap in a circle on the cake. Bake for 45 minutes to 1 hour until an inserted skewer comes out clean. Brush with the honey. Cool for a few minutes. Serve warm with clotted cream.
