Elderflower and Fruit Jelly

• 2-3tbsp elderflower cordial
• 750 ml (1¼ pints) water
• 200 gram(s) caster sugar
• 4  gelatine leaves
• 150 gram(s) raspberries
• 150 gram(s) seedless grapes, halved

Method

1. Put the elderflower cordial into a large pan. Add the water and caster sugar. Heat gently, stirring to dissolve the sugar.
2. Soak 4 gelatine leaves in cold water for 5min. Lift out the gelatine, squeeze out the excess water, then add the liquid to the pan. Stir to dissolve, then strain into a jug.
3. Divide the raspberries and grapes among six 200ml (7fl oz) glass dishes. Pour in the liquid. Chill for at least 4hr or overnight.
