Fruit and mixed seed flapjacks in a tin

Ingredients

  • 175g unsalted butter plus extra for greasing
  • 125g golden caster sugar
  • 50g golden syrup
  • 225g porridge oats
  • 2 tablespoons plain flour
  • pinch of ground ginger
  • 125g mixed dried fruit
  • 50g mixture of pumpkin, sunflower and sesame seeds

Method

  1. Heat the oven to 190°C (170°C fan oven) gas mark 5. Grease and line a shallow 30x35cm baking tin or a tin that has sides that add up to the same measurements.
  2. Melt the butter, sugar and golden syrup together in a pan set over a low heat.
  3. Mix together the oats, flour, ginger and a pinch of salt. Stir into the butter mixture, then add the fruit and seeds.
  4. 4 Turn into the prepared tin and bake for 25-30 minutes until golden. Cut into squares while still warm. Store in an airtight container for up to a week.

Tips & techniques

A couple of tablespoons of flour added to the flapjack mixture will give a softer, chewier texture.
