GH gammon and red wine onions

Ingredients

  • 1 tablespoon(s) olive oil
  • 2 medium onions, thinly sliced
  • 1  rosemary sprig
  • 8  prunes (optional)
  • 200 ml red wine
  • 4  smoked or unsmoked
  • gammon steaks
  • 1 tablespoon(s) dark brown soft sugar
  • 1 tablespoon(s) fresh parsley, chopped

Method

  1. Heat oil in a pan; add onions and rosemary. Season with salt. Gently fry over a low heat, covered, for 20min. Add the prunes, if using, to the wine and leave to soak.
  2. Preheat grill to medium. With scissors, snip fat around gammon at 1cm (½in) intervals - this stops steaks curling during cooking. Grill steaks for 7-8min, turning after 4min, until cooked through.
  3. Meanwhile, add sugar to onions, turn up heat to medium and cook, stirring, for 5min. Stir in the wine and prunes, if using, then bubble rapidly for 5min until liquid has evaporated. Remove the rosemary. Serve gammon topped with onions and garnished with parsley, with steamed green beans.
