Garlic and chilli prawns

• 2 tablespoon(s) olive oil
• 2 clove(s) garlic, finely sliced
• 1  red chilli, finely diced
• ½tsp chilli flakes, optional
• 75ml/3fl oz white wine
• 300g/11oz raw prawns, peeled but tails left on
• 2 tablespoon(s) chopped parsley
• garlic mayo, to serve

Method

1. In a large frying pan, heat oil and gently cook garlic, chilli and chilli flakes till garlic is softened. Pour in wine and bubble for 1 min.
2. Stir in prawns and parsley, and season with sea salt and freshly ground black pepper. Continue cooking till prawns turn pink and are cooked through. Serve with garlic mayo for dipping.
3. TIP Raw prawns are best for this, as ready-cooked ones become tough if reheated.
