prima ginger beer

Ingredients

  • 250g/9oz fresh ginger, peeled and thinly sliced
  • zest and juice of 1 unwaxed lemon
  • 200g/7oz golden caster sugar
  • 1  litre/1¾ pints soda water

Method

  1. In a saucepan, add ginger, lemon zest and sugar. Pour over just enough water to cover (about 300ml/½ pint). Bring slowly to boil till sugar has dissolved, then boil rapidly till syrupy. Remove from heat and leave to cool.
  2. Using a sieve, strain ginger mixture into a jug, then add soda water and lemon juice to taste. Chill before serving.
