  • 500 gram(s) soft goat's cheese
  • 10  fresh basil leaves
  • 1 tablespoon(s) olive oil
  • 1 large bag bistro salad
  • 50 gram(s) toasted pine nuts
  • 8  sun-blushed tomatoes, drained from oil balsamic vinegar
  • 8 slice(s) wholewheat bread, toasted

Method

  1. Put goat's cheese into a processor with basil leaves and oil, and whizz together to combine. Pop into 8 clingfilm-lined ramekins or heart-shaped moulds. Chill till needed.
  2. Arrange bistro salad leaves onto 8 plates. Upturn goat's cheese pâté and serve with sunblushed tomatoes, sprinkled with pine nuts and drizzled with vinegar. Offer toasted bread alongside.
