Goat’s Cheese and Walnut Salad

• 2 tablespoon(s) red wine vinegar
• 8 tablespoon(s) olive oil
• 1 large pinch of golden caster sugar
• 1 large radicchio, shredded
• 2 bunch(es) prepared watercress - around 125g
• 1  red onion, finely sliced
• 150 gram(s) walnut pieces
• 2  x 100g packs soft goat's cheese, crumbled

Method

1. To make the dressing, put the vinegar, olive oil and sugar in a small screwtop jar, season with salt and freshly ground black pepper, then shake well to combine. Put to one side.
2. Put the radicchio, watercress and onion in a large bowl, pour over the dressing and toss well.
3. Sprinkle over the walnuts and goat's cheese and serve with slices of crusty French bread.
