  • 2  x 85g pack mild soft goats' cheese
  • 85 gram(s) pack watercress, finely chopped
  • 200 gram(s) pack filo pastry
  • 1 tablespoon(s) olive oil
  • 2  eggs, lightly beaten
  • melted butter, to glaze

Method

  1. You will need: a 20.5cm/8in square tin
  2. Preheat oven to gas mark 6/200°C (190°C in a fan oven). In a large bowl, mix cheese and watercress, then season with sea salt and freshly ground black pepper. Layer base of tin with several sheets of filo pastry, so it overlaps edges, then brush lightly with oil.
  3. Add egg to cheese mixture and stir. Spread half of mixture over pastry, then top with about 6 more sheets of filo, again allowing it to overlap edges of tin.
  4. Spoon remainder of mixture on top, then fold overlapping pastry back to cover. Top with about four more sheet of filo, tucking it down edges of tin. Brush liberally with melted butter and bake for about 15 mins, till golden.
