lemon herb couscous

Ingredients

  • 4 large courgettes, cut into long 1.5cm (1/2in) diagonal slices
  • 4 tablespoon(s) extra virgin olive oil
  • 1  red chilli, deseeded and chopped
  • Juice of 1 lemon
  • 1 small handful of chopped fresh mint

Method

  1. Place the courgettes in a bowl with 2tbsp of the oil and chilli. Season well.
  2. In a hot griddle pan, cook the courgettes in batches until they are tender but retain a slight crunch. Drain on kitchen paper. Toss courgettes in a bowl with the lemon juice, mint and remaining oil. Serve slightly warm.
