Grilled Fish with Rocket Pesto

• 50 gram(s) rocket, chopped
• Zest and juice of 1?2 a lemon, plus lemon wedges to serve
• 0.5  garlic clove, chopped
• 25 gram(s) pinenuts, toasted
• 1 small shallot, chopped
• 25  extra virgin olive oil, plus extra to grease
• 4  chunky white fish fillets, such as Alaskan pollock or Pacific cod

Method

1. In a food processor, pulse the rocket, lemon zest and juice, garlic, pinenuts, shallot, oil and some seasoning until smooth.
2. Preheat the grill to medium. Put the fish on a lightly greased baking sheet and top with the rocket pesto. Grill for 3-5min until the fish is opaque and flakes easily when pushed with a knife. Garnish with lemon wedges and serve with potato wedges.
3. Get ahead... Put pesto into a container with clingfilm touching the surface. Chill for up to three days.
