Grilled peppers and halloumi cheese

• 450 gram(s) jar of red peppers (we used Karyatis Roasted Red Peppers, £2.05 for 450g from Sainsbury's)
• 2  x 250g packs halloumi cheese, sliced
• 1 small red onion, halved and sliced
• Several sprigs of fresh thyme
• 1 tablespoon(s) olive oil

Method

1. Drain peppers and pat dry with kitchen paper. Put onto a heatproof tray. Arrange 3 slices of cheese on top, then scatter with onion and sprinkle with thyme leaves.
2. Season generously with salt and freshly ground black pepper, and drizzle with olive oil. Then grill or barbecue for 10-15 mins, till completely warmed through.
3. Tip: To cook, we used a Grilling Plank, £2.95 from Homebase (0845 077 8888), for a gorgeous smokey flavour.
