  • 500 gram(s) (1lb 2oz) spring onions, trimmed
  • 1-2tbsp olive oil, for brushing
  • For the tarator sauce
  • 50 gram(s) toasted walnuts
  • 25 gram(s) fresh breadcrumbs
  • 2 clove(s) garlic, crushed
  • 100 ml olive oil
  • Juice of 1 lemon
  • Lemon wedges, to serve

Method

  1. To make the sauce, coarsely grind the walnuts in a food processor. Add the breadcrumbs, garlic, olive oil, about 150ml (¼pt) boiling water and lemon juice and process until smooth.
  2. Brush the spring onions with oil, season with salt and cook on a griddle pan for 4-5 minutes until lightly charred and tender. Place on a serving plate, drizzle over the sauce; serve with lemon wedges.
