GH Ham runner bean and chive penne

Ingredients

  • 350 gram(s) dried penne
  • 150 gram(s) runner beans, finely sliced
  • 1 tablespoon(s) olive oil
  • 125 gram(s) ham, roughly chopped
  • 1 large shallot, finely sliced
  • 1 clove(s) garlic, crushed
  • 75 gram(s) cream cheese
  • 2 tablespoon(s) snipped chives
  • Freshly grated parmesan to serve

Method

  1. Bring a large pan of lightly salted water to the boil and cook the pasta according to the packet instructions. Add the runner beans to the pan for the last 4min of the pasta cooking time.
  2. Meanwhile, heat the oil in a large pan and gently fry the ham and the shallot for 2-3min. Add the garlic and cook for a further 1min.
  3. Drain the pasta, reserving some of the water, then add the penne to the ham mixture with about 75ml (3fl oz) of the pasta water, the cream cheese and chives. Add a little more of the pasta water if you think it needs it. Season to taste. Toss well, then divide among four plates and sprinkle with parmesan to serve.
