100 gram(s) (3½oz) fresh breadcrumbs
Finely grated zest of 1 lemon
2 tablespoon(s) chopped fresh parsley
2 tablespoon(s) chopped fresh chives
2 plum tomatoes, finely chopped
50 gram(s) pitted black olives, finely chopped
4 x 150g trout fillets
2 tablespoon(s) olive oil

Preheat the oven to 200°C/ 180°C fan/Gas 6. Mix together the breadcrumbs, zest, herbs, tomatoes and olives. Season.
Arrange the fillets, skin side down, on a large oiled baking sheet and spoon the crust mixture on top. Drizzle with the oil and bake for 15 minutes or until cooked through.
