Ingredients

  • a knob of unsalted butter
  • 1 tablespoon(s) runny honey
  • 4 slice(s) fruitcake
  • vanilla ice cream, to serve

Method

  1. Heat the butter with the honey in a frying pan over a medium heat and fry the fruitcake slices for a minute or two on either side, turning them carefully with a spatula, until surrounded by a glossy caramel. Serve the syrupy pan juices spooned over the cake, with a scoop of ice cream on top. Recipe by Annie Bell
