Ingredients

  • 100 gram(s) unsalted butter, softened
  • 50 gram(s) caster sugar
  • 100 gram(s) Hymettus honey
  • 1  egg
  • 200 gram(s) hazelnuts, finely ground
  • 1 pinch(es) salt
  • 100 gram(s) plain flour
  • icing sugar to dust

Method

  1. Heat the oven to 160°C (140°C fan oven) gas mark 3.
  2. Beat the softened butter and the sugar until pale and creamy. Beat in the honey, then the egg.
  3. Fold in the nuts, salt and flour. The mixture will be quite a soft one.
  4. Place heaped teaspoons of the mixture 5cm apart on non-stick or prepared baking trays that have been greased and floured. Bake for 20-25 minutes or until firm but not hard. Transfer to racks to cool.
  5. Liberally dust with icing sugar and pile high on a plate to serve.
