Honey oat flapjack cookies

• 150g/5oz butter
• 150g/5oz soft light brown sugar
• 75g/3oz blossom honey
• 75g/3oz plain flour 1tsp ground nutmeg
• 1?2tsp bicarbonate of soda
• 200g/7oz jumbo rolled oats
• 1 medium egg, beaten

Method

1. In a small pan over a medium heat, add butter, sugar and honey, and melt together. Once butter is melted, stir in rest of ingredients and chill in fridge for 1 hr, or till set.
2. Preheat oven to gas mark 2/150°C (140°C in a fan oven). Roll into walnut-sized pieces and place on baking sheet covered with parchment. Then bake for 8-10 mins, till golden. Cool for 5 mins, then transfer to rack.
