CHICKEN BREASTS WITH MUSHROOMS AND SPINACH RECIPE

  • 2 chicken breasts, skin on
  • 1tbsp olive oil

Method

  1. Preheat oven to gas mark 6/200°C (180°C in a fan oven). Heat oil in a heavy-based frying pan (preferably cast iron) over a medium-high heat until hot. Season chicken breasts well with sea salt and freshly-ground black pepper.
  2. Add to pan skin-side down and cook for about 3-5 mins until golden, then turn and cook other side for same.
  3. Now put pan in oven (wrap foil around the handle if needed) and cook for about 15 mins until juices run clear when poked with a sharp knife. Remove and leave to rest for 10 mins before serving.
