• 1 can(s) chickpeas, rinsed and drained
• Juice of 1 lemon
• 2  garlic cloves, crushed
• 1 teaspoon(s) ground cumin
• 1 tablespoon(s) tahini paste
• 2 tablespoon(s) extra virgin olive oil, for drizzling
• Paprika and chopped fresh parsley, to garnish
• Toasted pitta bread and Greek black and green olives, to serve

Method

1. Place the chickpeas, lemon juice, garlic, cumin, tahini and 8tbsp water in a food processor and blend until smooth and creamy. Season and add more lemon juice, garlic, cumin or salt to taste if you wish.
2. Transfer the mixture to a shallow bowl and drizzle with the extra virgin olive oil. Sprinkle over a little paprika and chopped parsley just before serving.
