4 thick slices sponge or Madeira cake
4 scoop(s) strawberry or vanilla ice cream
4 large egg whites
8 tablespoon(s) caster sugar
Icing sugar, sifted, to serve

Preheat oven to 220ºC/200ºC fan/Gas 7. Cut each cake slice into a 5cm-6cm round. Place the rounds onto an ovenproof tray and top each one with a scoop of ice cream. Put the tray in the freezer until ready to cover with the meringue mixture and bake.
In a grease-free mixing bowl, whisk the egg whites and sugar to form stiff peaks. Roughly spread over the ice cream and cake. Bake for 3-4 minutes until the meringue is cooked through and golden.
