  • 4 large scoops good quality ice cream (your choice of flavour)
  • 2 large shop-bought sponge flan cases
  • 4  egg whites
  • 225 gram(s) caster sugar

Method

  1. Preheat the oven to 230ºC/ 210ºC fan/Gas 8. Put the ice cream scoops on a plate and place in the freezer for 30 minutes to 1 hour or until firmly frozen.
  2. Cut out four 10cm (4in) circles from the flan cases and place on a chilled baking sheet.
  3. In a large bowl, whisk the egg whites until they form soft peaks. Whisk in the sugar, a tablespoon at a time, and mix until stiff and glossy.
  4. Place the ice cream scoops on the flan discs, leaving a 2.5cm (1in) border all around. Using a palette knife, spread the meringue mixture over the ice cream and flan bases until completely covered. Place in the preheated oven and bake for 3-4 minutes or until the meringue is tinged brown in places. Remove from the oven and serve immediately. Per serving 536cals; 10g fat (5g saturated)
