1 rectangular focaccia bread
6-8tbsp good quality pesto
200 gram(s) mozzarella cheese, diced or cut into small pieces
200 gram(s) sunblush tomatoes
Basil, to garnish (optional)

Trim and cut the focaccia bread into 4 equal quarters, each approximately 10cm (4in) square. Place under a preheated hot grill and lightly toast both sides of each piece.
Remove the bread from the grill and spread each quarter with the pesto. Place half the mozzarella and the sunblush tomatoes on the bread, then top with the remaining mozzarella. Season well with salt and freshly ground black pepper and place under a hot grill again for 2-3 minutes or until the cheese has started to melt. Serve the toasties immediately, garnished with basil leaves, if desired.
