Jerk chicken

• 1 tablespoon(s) fresh thyme leaves
• 2.5cm (1in) fresh root ginger, grated
• 1 teaspoon(s) ground allspice
• 1 tablespoon(s) white wine vinegar
• 1 teaspoon(s) soy sauce
• 1 clove(s) garlic, crushed
• 2  green chillies, deseeded and finely chopped
• 3 tablespoon(s) vegetable oil
• 8  chicken pieces (we used thighs and drumsticks)

Method

1. Preheat grill to medium and set rack about 15cm (6in) from heat. Use a blender or a pestle and mortar to combine first eight ingredients until smooth.
2. Put chicken pieces on to a foil-lined baking tray. Pour over the jerk marinade and rub into the chicken. Grill for 12-15min until golden and cooked through. Serve with boiled basmati rice, and a green salad or seasonal vegetables.
