Layered blackberry cheesecake pots

• 250 gram(s) mascarpone cheese
• Finely grated zest and juice of 1 lemon
• 50 gram(s) caster sugar plus 1tbsp extra
• 200 ml double cream
• 500 gram(s) (1lb 2oz) fresh blackberries
• 12  amaretti biscuits, roughly crushed, leaving a few larger pieces

Method

1. Beat the mascarpone cheese with the lemon zest and sugar until smooth. Whisk the cream until it forms peaks, then fold into the cheese mixture.
2. Pulse a quarter of the berries in a food processor with the lemon juice and extra 1tbsp caster sugar until smooth. Stir the remaining berries into the cheese mix.
3. Divide 3/4 of the amaretti crumbs among 4 glass tumblers, then layer half the fruit and half the cheese. Repeat with the remaining crumbs, fruit and cheese. Top with extra berries and crumbs, if desired.
