250 gram(s) couscous
Zest and juice of 1 lemon
Juice of 1 orange
4 spring onions, finely chopped
6 tablespoon(s) finely chopped fresh flat-leaf parsley
3 tablespoon(s) finely chopped preserved lemon (from most supermarkets)
2-3tbsp extra virgin olive oil
1 handful pomegranate seeds, to garnish (optional)

Place the couscous in a bowl and just cover with boiling water. Cover and allow to stand for 10-12 minutes or until all the liquid is absorbed. Fluff the couscous using a fork.
Stir in the lemon zest and juice, orange juice, spring onions, parsley and preserved lemon. Leave for a few minutes before drizzling over the olive oil. Season well and garnish with pomegranate seeds, if desired.
