Lettuce, avocado and prawn salad

• 3 large limes
• 4 tablespoon(s) chopped fresh coriander
• 1  red chilli, deseeded and finely diced
• 2  shallots, finely sliced
• 4 tablespoon(s) extra virgin olive oil
• 4  Baby Gem lettuce leaves
• 2  avocados, peeled, stoned and sliced into wedges
• 20  cooked prawns, peeled, with the tails left on

Method

1. Peel 2 limes and cut into thick wedges. Place in a glass bowl with the coriander, chilli and shallots. Pour over the oil; season. Squeeze over juice from remaining lime, then mix together. Leave at room temperature for 20 minutes.
2. Wash and dry the lettuce, then place on a serving plate. Top with the avocado wedges, then scatter over the prawns. Spoon over the dressing and serve at once.
