Mango and Red Pepper Relish

• 2  ripe mangoes
• 125 gram(s) roasted red peppers from a jar
• 2 small red onions, finely sliced
• 4 tablespoon(s) Sweet Thai Chilli Dipping Sauce
• 3  limes
• 20 gram(s) pack coriander

Method

1. Peel the mangoes, cut the flesh away from the stone and chop. Put the mango in a bowl.
2. Drain the red peppers, cut in half and remove the seeds. Slice, then add to the bowl, along with the onion. Add the chilli sauce, the grated zest of 2 limes, plus the juice of 3 limes. Toss together, cover and chill until needed.
3. Roughly chop the leaves from a 20g pack of coriander, add to the relish before serving and mix well.
