Maple-salted Nuts

• 2 tablespoon(s) light brown muscovado sugar
• 100 ml (3½fl oz) pure maple syrup
• 4 tablespoon(s) sunflower oil
• 3 tablespoon(s) sea salt
• 200 gram(s) whole almonds with skins left on
• 250 gram(s) lightly salted peanuts with skins left on
• 100 gram(s) (3½oz) pecan halves

Method

1. Preheat the oven to 200°C (180°C fan oven) mark 6. Put the sugar, maple syrup, oil and 2tbsp of the salt into a roasting tin. Stir thoroughly to combine.
2. Add the almonds, peanuts and pecans. Stir well to coat the nuts in the mixture.
3. Roast for 15-20min, stirring the nuts occasionally until golden brown. Remove from the oven and sprinkle the remaining sea salt over the nuts. Tip the nuts on to baking parchment and leave to cool.
4. Store in an airtight box for up to a month.
