SHE cucumber salad

  • 2 large cucumbers, thinly sliced
  • 2 tablespoon(s) finely chopped fresh dill
  • 1 tablespoon(s) pink peppercorns
  • For the dressing
  • 100 ml olive oil
  • 50 ml raspberry vinegar
  • 1  heaped tsp Dijon mustard
  • 1 teaspoon(s) runny honey

Method

  1. Place the cucumbers in a shallow, wide bowl and scatter over the dill and pink peppercorns.
  2. Whisk all the dressing ingredients together, season well and pour over the cucumber mixture. Toss to mix well, cover and allow to stand for 10-15 minutes before serving.
