Ingredients

  • For the lime mayonnaise
  • 175 gram(s) mayonnaise
  • 30 ml (2tbsp) chopped fresh coriander
  • grated rind of 1 lime
  • 15 ml (1tbsp) lime juice
  • salt and ground black pepper
  • For the scallops
  • 15  queen scallops
  • 2.5cm (1in) fresh root ginger, finely chopped
  • 2  garlic cloves, peeled and crushed
  • 60 ml (4tbsp) runny honey
  • 30 ml (2tbsp) soy sauce
  • 8  rashers streaky bacon, halved
  • 30 ml (2tbsp) vegetable oil

Method

  1. To make the lime mayonnaise, mix all the ingredients together in a bowl, then cover and chill. Soak the cocktail sticks in cold water for 15min to prevent them burning during cooking.
  2. Place the scallops in a bowl. Mix together the ginger, garlic, honey and soy sauce and pour over the scallops. Cover and leave to marinate in a cool place for 1-2hr (don't leave for longer than 2hr or the scallops will become tough).
  3. Stretch the bacon rashers using the back of a knife and cut in half. Wrap a stretched half rasher around each scallop and secure with a wooden cocktail stick. Place the scallops on a lightly oiled grill rack, brush with oil and grill for 10-12min or until golden brown. Serve hot with the lime mayonnaise for dipping.
  4. TO PREPARE AHEAD Complete to the middle of step 3 (but don't grill). Cover and chill mayonnaise and scallops separately for up to 12hr.
  5. TO USE Complete the recipe.
