Ingredients

  • 10-12 medium parsnips
  • 1 large cooking apple
  • 2 tablespoon(s) light muscovado sugar
  • 50 gram(s) butter
  • 20 gram(s) pack flat-leafed parsley

Method

  1. Peel and roughly chop the parsnips. Put into a large pan of cold, salted water and bring to the boil. Simmer for 10min or until almost tender.
  2. While parsnips are simmering, peel, core and chop the apple, then drop into parsnips pan for the last 2- 3min of the cooking time. Drain; return to pan. Add the sugar and butter and mash together. Roughly chop the parsley and stir in. Taste for seasoning before serving.
