SHE bruschetta

Ingredients

  • 2  ripe tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 1  ripe avocado, halved, stone removed, peeled and finely chopped
  • 6 tablespoon(s) finely chopped coriander leaves
  • 8  thick slices of good crusty bread or sourdough
  • 1 clove(s) garlic, peeled
  • 2 tablespoon(s) red wine vinegar
  • Olive oil, to drizzle
  • Coriander leaves, to garnish (optional)

Method

  1. Place the chopped tomatoes, onion, avocado and coriander leaves in a bowl. Pour in the red wine vinegar and mix gently to combine. Season
  2. well with salt and freshly ground black pepper to taste.
  3. Preheat the grill to medium. Place the sliced bread on a baking tray and grill for 2-3 minutes on each side until golden brown. Rub both sides of the toasted bread with the garlic clove.
  4. Halve each slice of toasted garlic bread and spoon the avocado and tomato mixture on top. Drizzle with olive oil, garnish with some fresh coriander leaves, if desired, and serve immediately.
