Ingredients

  • 2 tablespoon(s) olive oil
  • 2  red onions, roughly chopped
  • ½ green chilli, finely chopped
  • 400 gram(s) tin plum tomatoes
  • 150 ml (¼ pint) hot vegetable stock
  • 75 gram(s) black olives, pitted and chopped
  • 320 gram(s) jar roasted red peppers, drained and roughly chopped
  • 1 tablespoon(s) sundried tomato paste
  • 1 tablespoon(s) nonpareilles capers
  • 1 teaspoon(s) golden caster sugar
  • 300 gram(s) pasta
  • 1 large handful basil, shredded, plus extra leaves to garnish
  • Parmesan shavings to garnish

Method

  1. Heat oil in a pan and add the onions. Cover and cook on a low heat for 10min. Stir in chilli, tomatoes, stock, olives, peppers, tomato paste, capers and sugar. Simmer for 10min.
  2. Meanwhile, bring a large pan of water to the boil and cook the pasta according to the instructions on the pack. Drain.
  3. Stir the basil into the sauce and season. Toss with the pasta and spoon among four bowls. Garnish with remaining basil and the parmesan.
