Ingredients

  • ready-made sponge cake or sponge flan
  • 2-3tbsp lemon curd
  • about 4tbsp double cream
  • icing sugar and redcurrants, to decorate (optional)
  • You will need:
  • a small round metal cutter

Method

  1. Stamp out as many rounds from the sponge cake as you can, so you've got an even number, then sandwich together with lemon curd and double cream. Top with a dusting of icing sugar and redcurrants to decorate, if you wish.
