Mushroom pâté

• 25 gram(s) (1oz) butter
• 450 gram(s) (1lb) chestnut mushrooms, half of them chopped, half grated
• 1 pinch(es) paprika
• few stalks fresh thyme, leaves only
• 2-3tbsp crème fraîche

Method

1. Heat butter in a frying pan. Add mushrooms and cook on a low heat for about 8-10 mins or till they begin to release their juices.
2. Add paprika and thyme and season with sea salt and freshly ground pepper. Stir through crème fraîche and cook for a few more mins. Taste and adjust seasoning as required.
3. Spoon mixture into a food processor (use pulse button a couple of times, if you need to). The pâté should remain fairly chunky. Transfer to serving dishes and sprinkle with a little more paprika.
4. Tip Any leftover pâté can be used to stuff chicken for a simple supper dish.
