Ingredients

  • 25 gram(s) butter
  • 1 tablespoon(s) olive oil
  • 1-2 garlic cloves, peeled and crushed
  • 1  lemongrass stalk, finely chopped
  • 1 medium red chilli, deseeded and chopped
  • 250 gram(s) fine green beans, trimmed
  • 250 gram(s) pack dried egg noodles
  • 150 gram(s) shiitake mushrooms, trimmed
  • 150 gram(s) oyster mushrooms, halved if large
  • 4  level tbsp roughly chopped coriander, plus extra leaves to garnish
  • 1  lemon, cut into wedges, to serve

Method

  1. Put the butter and oil in a wok or large frying pan and heat gently to melt the butter. Add the crushed garlic, lemongrass and chilli and stir-fry for around 30sec.
  2. Bring a large pan of water to the boil and steam the green beans for 5min. Remove the steamer and use the water to cook the noodles, according to the instructions on the packet. Drain well.
  3. Add the green beans and both types of mushroom to the frying pan or wok and stir-fry for 3-4min. Add the noodles and coriander and toss everything together. Garnish with coriander leaves and serve in warmed bowls with the lemon wedges.
