Ingredients

  • 15  to 20g of dried nettles
  • 8 medium potatoes, cubed
  • 1  onion, sliced
  • 1  garlic clove (or two if you like garlic), finely chopped
  • 1 tablespoon(s) good quality olive oil
  • salt, pepper fresh cream and paprika to serve

Method

  1. This was handed down to my mother from her mother, from her mother. It is full of goodness and excellent to fight colds and other winter infections. I get packets of dried nettles from my mother in France, but they are available from good health shops here. You can also dry fresh nettles from your garden.
  2. Method: fry the onion, garlic and potatoes in lthe oil, for 5 minutes or until the onion is soft but not brown. Add the nettles, Cover with water, add a pinch of salt and bring to the boil, then simmer for 30 minutes. Check the soup is not getting dry. Mix the soup with an electric mixer, check the consistency and season to taste. (I ike my soup quite thick) Serve with a dollop of fresh cream and a sprinkle of paprika. Note: you can use vegetable stock for added taste, or chicken stock if you are not vegetarian.
